Arugula Salad With Fresh Peaches and Burrata

One of my favorite (and easiest) salads to make in summer is an arugula salad. This recipe is a different twist on the usual arugula with olive oil, lemon and parmesan. The peaches and burrata make it a little more interesting, and can also be very filling if you want to use as a main lunch course with some crusty fresh bread on the side, and a glass of rose to sip, of course.

What is burrata? Burrata is a semi-soft Italian mozzarella cheese that is filled with a creamy curd and cream, which spills out when you cut it open. Burrata literally translates into “ buttered”. Unlike most cheeses, burrata is fresh and meant to be eaten right away when opened. All of the ingredients can be found at your favorite market. If you can’t find fresh burrata, go ahead and substitute buffalo mozzarella. It isn’t as creamy, but it will be just as tasty.

Ingredients

1 bag of organic arugula (if you can only find the large plastic container of arugula, use 1/2)

3-4 fresh and ripe peaches

1 container fresh burrata cheese

White Balsamic Vinaigrette (recipe to follow)

White Balsamic Vinaigrette:

¼ cup good organic olive oil
2 1/2 tablespoons white balsamic vinegar *( can be found at most markets and Trader Joe’s)
1 tablespoon honey
1 teaspoon Dijon mustard
Combine ingredients and whisk well. Set aside.
* You can substitute balsamic vinegar for the white balsamic if you don’t have. I love the lightness of the white balsamic vinegar with the peaches, although many people love regular balsamic. The measurements don’t have to be exact- the vinaigrette can be made to your taste as well.

Place the arugula on your favorite platter, then arrange the peaches, sliced right before serving, and burrata onto the platter. Add sea salt and freshly ground pepper to taste ( if needed). Drizzle the whisked white balsamic vinaigrette over the salad and serve! Another option is to pre-serve the salads in individual bowls or plates, so you have it all contained. Serves 3-4. Peaches are only around for about another month, so enjoy soon!
